Festive Guacamole

Ingredients
  • 1 ripe avocado (learn how to find a ripe avocado)
  • 1 roma tomato; remove seeds and dice (or use 1/4 cup petite diced canned tomatoes, drained)
  • 3 to 4 green onions; snip with scissors or dice into small pieces
  • 4 to 5 sprigs of cilantro; remove the leaves from the stems and tear or mince the leaves into small pieces
  • 1/4 fresh lime, squeezed (~1.5 teaspoons lime juice)
  • 1/4 teaspoon salt
  • 1/4 cup black beans, drained & rinsed (optional)

Instructions
Wash your hands with soap and water, then gather all your kitchen gear and ingredients and put them on a clean counter.
  1. With the help of an adult, slice the avocado in half. Remove the pit and scoop out the insides with a spoon. Put the avocado on a cutting board or in a bowl and using a fork, mash it until it is still chunky, not smooth.
  2. Add the diced tomato, diced onion and torn up or minced cilantro leaves. Squeeze the lime and add the juice. Sprinkle in the salt. 
  3. Stir it all together, but not too much. Add hot sauce and/or black beans, if you like.
  4. Move the guacamole to a serving bowl and get creative to shape and decorate as a bat! Then, try it with baby carrots, snap peas, jicama sticks, or any of your favorite veggies! 

Note: ​Put the avocado pits in the guacamole to prevent it from turning brown from the air. Cover tightly with plastic wrap and refrigerate no more than four hours.
