PowerUp Lentil Tacos

This 7-ingredient easy, kid-approved recipe needs no convincing that lentils make a tasty substitute for typical taco meat.

PowerUp Lentil Tacos

Ingredients
  • 1 tablespoon canola oil
  • 3/4 cup onion, diced (1 medium onion)
  • 2-3 cloves garlic, minced
  • 1 tablespoon taco seasoning*
  • 3/4 cup dried lentils
  • 2 cups veggie broth
  • 3/4 cup salsa

* use your favorite seasoning or the PowerUp Homemade Taco Seasoning

  


Makes: 2 1/2 cups (about 10 tacos)

Instructions
  1. Heat large skillet on medium-low. Add onion and garlic and sauté for 5-7 minutes until translucent. Garlic and onion have the best flavor when sautéed “slow and low” (5-7 minutes, medium-low heat).
  2. Add dried lentils and taco seasoning, stir and cook for 1 minute.
  3. Add broth, bring to a boil for 1 minute and then reduce heat to low, cover and cook until lentils are tender and liquid is absorbed, about 25 minutes.
  4. Uncover and stir until thickened, about 5-10 minutes.
  5. Mash lentils a bit with a fork, if desired, and stir in salsa.
  6. Add to your choice of whole grain taco shell and top with cheese, diced tomato and the PowerUp Pineapple Pico de Gallo. Enjoy!
