PB&J Oatmeal Bars

A great alternative to every kids favorite sandwich. Make these ahead of time to grab on the go or as a snack at home.

PB&J Oatmeal Bars

  • 3 cups rolled oats or 2 cups oatsand 
  • 1 cup crispy rice cereal
  • 1/4-1/2 cup dried fruit (raisins, cherries, blueberries, etc.)
  • 1/2 cup nut butter (peanut, almond or sunflower seed)
  • 1/4 cup all-fruit jam or honey
  • 1/4 cup hot water
  • 1/4 teaspoon salt 

Serves: 12 

  1. Heat oven to 350°F. Oil an 8”x11” baking pan. Use a larger pan for thinner bars. 
  2. Pour oats and dried fruit into a large bowl.
  3. In a small pan over low heat, heat nut butter, half of the jam, water and salt until smooth. 
  4. Pour mixture over oats and mix until well coated.
  5. Press into prepared pan. 
  6. Spread remaining jam over the top, if desired. 
  7. Bake for 20-25 minutes.
  8. Leave in pan until cooled. 
  9. Cut into bars and enjoy with a cup of milk.
