Tofu-licious Stir Fry

Ingredients

  • 1 block extra firm tofu
  • 2-3 cups vegetables, any combination
  • Cooking from frozen works too! Check out the vegetable mixes or blends in the freezer section.
  • 3 cups cooked grain, any type
  • Some grains to try: brown rice, brown rice noodles, whole grain couscous, barley; cook per package instructions (1 cup dry = about 3 cups cooked)
  • 2 Tablespoons cornstarch
  •  teaspoon garlic powder (optional)
  • 2 Tablespoons canola oil, divided
  • 11-14 ounces stir fry sauce of your choice

Peanut Sauce: (or use your favorite marinade or stir fry sauce)

  • 1/4 cup smooth peanut butter
  • 1/4 cup soy sauce or tamari
  • 1/8 cup warm water
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon brown sugar
  • 1/2 teaspoon salt
 

Serves 3-4

Instructions
 
  1. Prepare tofu: remove from package and any liquid. Cut in half lengthwise, then into 1-inch cubes.
  2. Prepare peanut sauce: Add all sauce ingredients in a medium bowl and stir until combined.
  3. In a separate medium bowl, add 2 Tablespoons cornstarch and 1 teaspoon garlic powder.
  4. Toss cubed tofu in the peanut sauce until coated. Then transfer the tofu to the cornstarch bowl. Mix gently to evenly coat the tofu. Note: There will be extra sauce, save this for the stir-fried vegetables.
  5. Heat large skillet on medium. Add 1 Tablespoon canola oil.
  6. Once hot, add tofu to the skillet in a single layer. Cook until brown, about 3-4 minutes. Flip over and fry for another 3-4 minutes or until crispy. Once finished, transfer to a wire rack or plate.
  7. With tofu now removed, add 1 Tablespoon canola oil to same hot skillet and add vegetable mixture, toss to coat. If using frozen, put lid on pan and cook for about 6 minutes. Check and stir after 6 minutes; it may need an additional 2-4 minutes depending on the size of the veggies. If using fresh, start with harder veggies first (such as carrots, onions, broccoli, cauliflower or green beans). As they soften, add softer veggies (such as yellow squash or zucchini). Cook time may be about 10 minutes.
  8. Add the extra peanut sauce to the skillet of vegetables. Stir to coat.
  9. Plate cooked grain of your choice, add vegetable mixture and then the cooked tofu. Top with peanuts, bean sprouts and green onions (optional) and enjoy!
