Chickpea Avocado Smash

Serves 2

Ingredients

  • 1 avocado
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 slices whole wheat bread
  • ‘Everything bagel’ seasoning (or your favorite savory seasoning)

Instructions

  1. Using the back of a fork on a plate or other flat surface, smash chickpeas until broken up well.
  2. Cut the avocado in half. Remove the pit. Scoop out inside onto the smashed chickpeas and use the back of a fork to smash and mix together well.
  3. Toast the bread and top each slice with half of the chickpea-avocado mixture.

  4. Sprinkle ‘everything bagel’ seasoning on top and enjoy!


Other ideas:

  • Add a cooked egg on top
  • Have leftover spread? Save in a container in the refrigerator and use later as a veggie dip
