Rainbow Fruit Salsa & Cinnamon Tortilla Chips

This recipe made it into the top 4 in the Chomp Recipe Contest and comes from the Booth Family from Scandia, MN. Mom, Lisa, said her daughter, Adelaide, came up with the idea of turning this recipe into all of the colors of the rainbow and giving it a colorful name. They also make sure to always prepare the tortilla chips using a whole grain or corn tortilla. This is one of their favorite go-to snacks.

Rainbow Fruit Salsa & Cinnamon Tortilla Chips

Ingredients:
Use a variety of colorful fruits cut in to small pieces. Ideas: 
  • Red: Strawberries, Raspberries, Apple, Cherry or Watermelon 
  • Orange: Clementine, Orange, Cantaloupe, Papaya, Nectarine
  • Yellow: Banana or Guava 
  • Green: Grapes, Pear, Kiwi, Honeydew or Green Apple 
  • Blue/Purple: Blueberries, Blackberries, Grapes or Plum

Ingredients for Cinnamon Tortilla Chips: 
  • 1 tortilla per person, whole grain or corn 
  • 1/2 teaspoon oil (canola or olive oil) or spray oil 
  • Cinnamon & Sugar mixture (less than 1 teaspoon per tortilla)
 

Serves: Varies


Instructions for fruit salsa:
  1. Prepare about 1 cup of fruit per person. 
  2. Use any combination of fruits that you have around the house, trying to use one of each color (red, orange/yellow, green and blue/purple). 
  3. Wash fruit and cut in to small pieces (pea size or 1/4" or less)
  4. Mix all fruit into a bowl. Put in refrigerator to chill until ready to eat. 

Instructions for Cinnamon Tortilla Chips:
  1. Preheat oven to 350 degrees 
  2. Cut whole grain or corn tortillas into 8 pie shaped pieces
  3. Place on cookie sheet and brush on canola or olive oil (or spray with cooking oil) 
  4. Lightly sprinkle with cinnamon and sugar mix
  5. Turn over & repeat on other side of tortilla 
  6. Bake for 8 to 10 minutes. 
  7. Remove from oven & place on cooling rack for 15 minutes. 
  8. Dip the chips in to the rainbow fruit salsa.
