Chomp’s Carrot Cookies

This recipe is an adapted version from a Chomp Recipe Contest winner, from the kitchen of the Caron family of Hudson, WI. Jake Caron, 14 years old, loves this cookie so much that he decided to enter into the contest himself.

Chomp’s Carrot Cookies

Ingredients:
  • 2 cups carrots, grated (about 4 carrots)  
  • 1 3/4 cup quick cooking oats
  • 3/4 cup flour
  • 3/4 cup raisins
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 3 eggs
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda 
  • 1/2 teaspoon ground cinnamon 
 

Serves: Makes 30 Cookies

Instructions
  1. Preheat oven to 375 degrees.
  2. Wash, peel and grate 2 cups carrots. Set aside.
  3. Crack all 3 eggs into a cup or bowl. Whisk eggs briefly  until yolks and whites are just combined.
  4. Measure oil, vanilla, brown sugar and applesauce. Stir together with whisked eggs until mixed.
  5. Measure oats, flour, baking soda and cinnamon into a separate bowl. Stir until mixed together.
  6. Mix wet and dry ingredients together. Then stir in grated carrots and raisins.
  7. Scoop tablespoon-sized amounts onto a sheet pan lined with parchment paper or greased with oil.
  8. With the back of a fork, flatten each scoop of dough.
  9. Bake at 375 degrees for about 10-12 minutes. Allow to cool slightly, then enjoy!
