Lisa’s Kid-Friendly Fish Sticks

This recipe comes from the kitchen of Lisa Rambo from Houlton, WI, a contestant on The Biggest Loser season 14, a national speaker and busy, working mom with four kids! These kid-friendly fish sticks are also gluten free. Lisa’s kids love them and are a hit with guests! When baked, the end result is a crunchy fish stick with a breading that doesn’t fall off.

Lisa’s Kid-Friendly Fish Sticks

Ingredients
  • 2 pounds firm white fish (Lisa’s family uses the crappies they catch, but tilapia works well, too).
  • 3 cups corn flake crumbs, lightly seasoned with salt and any other seasonings you like.
  • 3 eggs, beaten and in a shallow pan or pie plate
  • Aluminum foil
  • 1 gallon-size Ziploc baggie
 

Serves: 6

Instructions
  1. Preheat oven to 400 degrees.
  2. Defrost fish and then pat it dry (this helps to make the breading stick better)
  3. Cut fish into smaller “fish stick” portions. 
  4. Beat eggs and pour into a pie plate.
  5. Add seasoned cornflakes into a Ziploc bag and crush them up using a rolling pin or the palms of your hands.
  6. Dip each individual piece of fish into the egg wash (make sure all sides get covered) and then toss into the cornflake crumb bag, shake making sure all sides get covered.
  7. Place breaded fish sticks onto a foil-lined baking sheet 
  8. Lisa’s tip: Lightly coat the foil with olive oil.
  9. Bake fish sticks for 20 minutes. No flipping necessary.

Notes
  • Lisa’s tip: Depending on the size of your fish sticks, they may need less baking time.
